Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 lemons (juiced)
- 3 cloves garlic (minced)
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley (for garnish)
Instructions
- Step 1: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper to create a marinade.
- Step 2: Add the chicken breasts to the bowl and ensure they are well coated with the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.
- Step 3: Preheat your grill to medium-high heat. Oil the grill grates lightly to prevent sticking.
- Step 4: Remove the chicken from the marinade and discard any leftover marinade. Place the chicken on the preheated grill.
- Step 5: Grill the chicken for about 6-7 minutes on each side or until fully cooked through (internal temperature should reach 165°F).
- Step 6: Once cooked, remove from the grill and let rest for a few minutes before slicing. Garnish with fresh parsley before serving. Enjoy!
Notes
- For optimal storage, keep any leftover grilled chicken in an airtight container in the refrigerator for up to 3 days, ensuring it stays juicy and flavorful.
- When reheating, gently warm the chicken in a skillet over low heat or in the microwave with a splash of water to maintain moisture, avoiding dryness.
- Serve the grilled chicken sliced over a vibrant salad or alongside grilled vegetables for a refreshing summer meal that showcases seasonal produce.
- For best results, marinate the chicken for the full 2 hours if time permits; this allows the flavors to deeply penetrate the meat, enhancing its taste and tenderness.
