Ingredients
Scale
- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Sour cream for serving (optional)
Instructions
- Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with foil or parchment paper. Wash the sweet potatoes thoroughly and pierce them several times with a fork.
- Step 2: Place the sweet potatoes on the prepared baking sheet and bake in the preheated oven for about 45-60 minutes, or until they are tender and can be easily pierced with a fork.
- Step 3: While the sweet potatoes are baking, combine the cooked shredded chicken and BBQ sauce in a medium bowl, mixing well until the chicken is fully coated.
- Step 4: Once the sweet potatoes are done baking, remove them from the oven and let them cool slightly. Slice each sweet potato down the center lengthwise, creating an opening for the filling.
- Step 5: Stuff each sweet potato with the BBQ chicken mixture, then top with shredded cheddar cheese and diced red onion. Return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
- Step 6: Remove from the oven, garnish with chopped cilantro, and serve warm with sour cream if desired. Enjoy your BBQ Chicken Stuffed Sweet Potatoes!
Notes
- To store leftovers, keep the stuffed sweet potatoes in an airtight container in the refrigerator for up to 3 days, ensuring they stay fresh and tasty.
- When reheating, pop them in the microwave for 1-2 minutes or bake at 350°F (175°C) for about 10-15 minutes, covered with foil to prevent drying out.
- For an extra touch, serve your BBQ Chicken Stuffed Sweet Potatoes with a dollop of sour cream and a sprinkle of extra cilantro for added flavor and freshness.
- For a chef's tip, feel free to customize the filling by adding ingredients like jalapeños for heat or corn for sweetness, making each batch your own delicious creation!
