Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup sour cream
- 2 large eggs
- 1 teaspoon alcohol-free vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup fresh blackberries (or frozen, thawed)
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
- Step 2: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.
- Step 3: Add in the eggs one at a time, mixing well after each addition. Then stir in the vanilla bean paste and sour cream until fully combined.
- Step 4: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until incorporated.
- Step 5: Gently fold in the blackberries into the batter. Pour half of the batter into the prepared cake pan and spread it evenly. Add dollops of the remaining batter on top, then swirl it gently with a knife to create a marbled effect.
- Step 6: Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before serving. Enjoy your delicious Blackberry Swirl Coffee Cake!
Notes
- For optimal freshness, store any leftover Blackberry Swirl Coffee Cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- When reheating, warm individual slices in the microwave for about 10-15 seconds to enjoy the cake's moistness and enhance the flavors.
- Serve your coffee cake with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat that pairs beautifully with the tartness of the blackberries.
- To keep your cake light and fluffy, be careful not to overmix the batter once you add the dry ingredients; a few lumps are perfectly fine!
