Ingredients
Scale
- 8 slices turkey beef bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups chopped romaine lettuce
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Step 1: In a large pot over medium heat, cook the chopped turkey beef bacon until crispy. Remove the beef bacon and set aside, leaving the drippings in the pot.
- Step 2: In the same pot, add the diced onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
- Step 3: Pour in the chicken broth and add the undrained diced tomatoes. Bring to a gentle boil and then reduce heat to a simmer.
- Step 4: Stir in the chopped romaine lettuce and smoked paprika. Let the soup simmer for about 10 minutes, allowing the flavors to meld together.
- Step 5: Season with salt and pepper to taste before serving. Garnish each bowl with crispy turkey beef bacon pieces on top. Enjoy your BLT Soup!
Notes
- For optimal freshness, store any leftover BLT Soup in an airtight container in the refrigerator for up to 3 days.
- When reheating, gently warm the soup on the stove over low heat to preserve the texture of the romaine lettuce and avoid overcooking it.
- Serve your BLT Soup with a sprinkle of fresh herbs or a dollop of sour cream for added richness and flavor contrast.
- For an extra depth of flavor, consider adding a splash of Worcestershire sauce or a squeeze of lemon juice right before serving!
