Indulge in Blueberry Lemon Pie Bars, where zesty lemon meets luscious blueberries in a buttery crust. Includes complete cooking instructions and detailed nutritional breakdown.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup fresh blueberries
  • 2 large eggs
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • ½ teaspoon baking powder

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or line it with parchment paper for easy removal.
  2. Step 2: In a medium bowl, combine the softened butter and granulated sugar, mixing until light and fluffy. Gradually add in the flour and baking powder until a crumbly dough forms.
  3. Step 3: Press about two-thirds of the dough mixture into the bottom of the prepared baking dish to create an even crust layer. Bake it in the preheated oven for about 10 minutes until lightly golden.
  4. Step 4: While the crust is baking, prepare the filling by whisking together the eggs, lemon juice, lemon zest, and remaining sugar in a mixing bowl. Gently fold in the fresh blueberries.
  5. Step 5: Once the crust is par-baked, remove it from the oven and pour the blueberry filling over the crust. Crumble the remaining dough on top of the filling before returning it to bake for another 25-30 minutes or until set and lightly browned on top.
  6. Step 6: Allow to cool completely before slicing into bars. Serve chilled or at room temperature, enjoying a burst of fresh blueberry and zesty lemon flavor!

Notes

  • For optimal freshness, store your Blueberry Lemon Pie Bars in an airtight container in the refrigerator for up to five days. If you prefer them warm, reheat individual bars in the microwave for about 15-20 seconds, just until they are warmed through but not hot. These bars are delightful served with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat. For the best flavor and aroma, make sure to use freshly grated lemon zest, as it really enhances the citrus notes in the filling.
