Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup brewed coffee (cooled)
- 1/4 cup coffee fruit juice (e.g., Kahlúa)
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup heavy cream
- 1/2 cup crushed Oreo cookies
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- Step 2: In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
- Step 3: In a separate bowl, mix together the cooled brewed coffee, coffee fruit juice, softened butter, and eggs. Gradually add the wet ingredients to the dry ingredients and stir until just combined.
- Step 4: Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and let cool completely.
- Step 5: While the cupcakes are cooling, prepare the Oreo cookie buttercream. In a large bowl, beat the softened butter until creamy. Gradually add in the powdered sugar and heavy cream, mixing until smooth. Fold in the crushed Oreo cookies until evenly distributed.
- Step 6: Once the cupcakes have cooled completely, frost them generously with the Oreo cookie buttercream and garnish with additional crushed Oreos if desired. Enjoy!
Notes
- For optimal freshness, store the Boozy Chocolate Coffee Cupcakes in an airtight container at room temperature for up to three days, or in the refrigerator for up to a week. If you prefer them warm, reheat the cupcakes gently in the microwave for about 10-15 seconds, ensuring they don’t dry out. For an extra special touch when serving, consider pairing these cupcakes with a scoop of vanilla ice cream or a drizzle of chocolate sauce for an indulgent dessert experience. When making the Oreo cookie buttercream, ensure your butter is softened to room temperature for easy mixing and a smooth texture; this will help achieve that perfect creamy consistency.
