Ingredients
Scale
- 1 lb boneless, skinless chicken thighs
- 2 tablespoons Cajun seasoning
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 cup cooked rice (white or brown)
- 1 cup mixed vegetables (bell peppers, corn, and peas)
- 1 tablespoon soy sauce
- Fresh parsley for garnish (optional)
Instructions
- Step 1: In a bowl, combine the chicken thighs with Cajun seasoning, honey, and olive oil. Mix well to ensure the chicken is evenly coated and let it marinate for at least 15 minutes.
- Step 2: While the chicken is marinating, cook the rice according to package instructions. Set aside once cooked.
- Step 3: Heat a skillet over medium-high heat and add the marinated chicken thighs. Cook for about 6-7 minutes on each side or until the chicken is fully cooked and has a nice caramelized exterior.
- Step 4: In the same skillet, add the mixed vegetables and soy sauce. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
- Step 5: To assemble the bowls, place a serving of rice at the bottom of each bowl, top with sliced Cajun honey chicken, and add the stir-fried vegetables. Garnish with fresh parsley if desired before serving. Enjoy your meal!
Notes
- For optimal freshness, store any leftovers in an airtight container in the refrigerator for up to 3 days.
- When reheating, simply warm the chicken bowls in the microwave for about 1-2 minutes, or until heated through, adding a splash of water if needed to keep the rice moist.
- For a delightful twist, consider serving your Cajun Honey Chicken Bowls with avocado slices or a dollop of sour cream to enhance the flavors.
- To elevate the dish, try marinating the chicken thighs longer than 15 minutes—up to 2 hours—allowing those bold Cajun and honey flavors to penetrate deeply for an even more delicious result.
