Ingredients
Scale
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup buttermilk
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla bean paste
- 3 fun-sized Butterfinger bars, crushed
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Step 2: In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking soda, and salt. Whisk together until well blended.
- Step 3: Add the softened butter, eggs, and buttermilk to the dry ingredients. Beat the mixture with an electric mixer on medium speed for about 2 minutes until smooth and creamy.
- Step 4: Fill each cupcake liner about two-thirds full with the batter. Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center comes out clean. Let them cool completely on a wire rack.
- Step 5: For the Butterfinger frosting, beat the softened butter in a bowl using an electric mixer until creamy. Gradually add in the powdered sugar and mix until combined. Pour in the heavy cream and alcohol-free vanilla extract; beat until fluffy. Fold in the crushed Butterfinger bars.
- Step 6: Once the cupcakes are cooled, generously frost each one with the Butterfinger frosting using a spatula or piping bag. Enjoy your delicious Chocolate Cupcakes with Butterfinger Frosting!
Notes
- To store your chocolate cupcakes, keep them in an airtight container at room temperature for up to three days, or refrigerate them for up to a week for best freshness.
- If you prefer warm cupcakes, simply pop them in the microwave for about 10-15 seconds to gently reheat without drying them out.
- For an extra touch, serve your cupcakes topped with additional crushed Butterfinger bars or a drizzle of chocolate sauce for a delightful presentation.
- When making the Butterfinger frosting, make sure your butter is at room temperature for easy blending and a creamy texture; this will help achieve that light and fluffy consistency you want!
