Ingredients
Scale
- 1 box of brownie mix (plus ingredients required for the mix)
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla bean paste
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 1 cup mini chocolate chips
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and prepare a 9-inch springform pan by greasing it lightly or lining it with parchment paper.
- Step 2: Prepare the brownie mix according to the package instructions and pour it into the bottom of the prepared springform pan. Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted comes out with a few moist crumbs. Let it cool completely.
- Step 3: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar and vanilla bean paste, mixing until well combined.
- Step 4: Add the eggs one at a time, beating well after each addition. Then stir in the sour cream and heavy cream until the cheesecake mixture is smooth and creamy.
- Step 5: Pour the cheesecake batter over the cooled brownie layer in the springform pan. Sprinkle mini chocolate chips evenly on top. Bake for an additional 45-50 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven and leave the cheesecake inside for another hour to cool gradually.
- Step 6: Once cooled, remove from the oven and refrigerate for at least four hours (or overnight) before serving to allow it to fully set. Enjoy your Cosmic Brownie Cheesecake!
Notes
- For optimal freshness, store your Cosmic Brownie Cheesecake in an airtight container in the refrigerator, where it will keep well for up to a week.
- If you prefer a warm slice, gently reheat individual portions in the microwave for about 10-15 seconds, ensuring not to overheat to maintain its creamy texture.
- For a delightful serving suggestion, top each slice with whipped cream and additional mini chocolate chips or colorful sprinkles for that extra cosmic flair.
- To enhance the flavor, consider using high-quality vanilla bean paste and allowing the cream cheese to soften completely at room temperature before mixing for a smoother cheesecake batter.
