Instructions

  1. Step 1: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves cut-side down on a baking sheet and roast for about 30-40 minutes until tender.
  2. Step 2: While the squash is roasting, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Step 3: Add the shrimp to the skillet and cook for about 3-5 minutes, stirring occasionally, until they turn pink and opaque. Season with salt and pepper to taste.
  4. Step 4: Once the shrimp are cooked, add the halved cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they soften. Stir in the chopped basil just before removing from heat.
  5. Step 5: When the spaghetti squash is done roasting, carefully flip it cut-side up and use a fork to scrape out the strands of squash into a bowl. Toss with the shrimp mixture until well combined. Serve hot, topped with grated Parmesan cheese if desired.
