Instructions

- Step 2: In a large bowl, beat the softened cream cheese and granulated sugar together using an electric mixer until smooth and creamy. Make sure there are no lumps.
- Step 3: Add in the eggs one at a time, mixing well after each addition. Then, incorporate the peppermint extract until everything is fully combined.
- Step 4: Pour the cheesecake batter over the prepared crust in the springform pan. Smooth the top with a spatula and tap the pan on the counter gently to release any air bubbles.
- Step 5: Bake in the preheated oven for about 50-60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven, crack open the door slightly, and let it cool inside for about an hour.
- Step 6: While cooling, whip the heavy whipping cream until stiff peaks form. Fold in the melted semi-sweet chocolate chips gently. Once the cheesecake is completely cool, spread this whipped chocolate topping over the top of your cheesecake and refrigerate for at least four hours or overnight before serving.
