Ingredients
Scale
- 8 oz spaghetti
- 2 cups fresh spinach, chopped
- 1 cup sun-dried tomatoes, packed in oil, drained and chopped
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Step 1: Begin by cooking the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a bit of the pasta water.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Step 3: Stir in the sun-dried tomatoes and cook for another 2 minutes, allowing the flavors to meld together.
- Step 4: Pour in the heavy cream and bring the mixture to a gentle simmer. Allow it to cook for about 3-4 minutes until slightly thickened.
- Step 5: Add the chopped spinach to the sauce and stir until wilted. Then mix in the cooked spaghetti, tossing everything together. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
- Step 6: Finally, stir in the grated Parmesan cheese and season with salt and pepper to taste. Serve warm and enjoy!
Notes
- For optimal freshness, store any leftovers in an airtight container in the refrigerator for up to 3 days.
- When reheating, gently warm the spaghetti in a skillet over low heat, adding a splash of milk or reserved pasta water to revive the creamy sauce without drying it out.
- For an extra burst of flavor, serve your dish with a sprinkle of additional grated Parmesan and a squeeze of fresh lemon juice to brighten the flavors.
- To enhance the richness of the sauce, consider sautéing some chopped mushrooms along with the garlic before adding the sun-dried tomatoes for added texture and umami.
