Ingredients
Scale
- 8 oz penne pasta
- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes with green chilies
- 2 tbsp chipotle sauce (adjust to taste)
- 1/2 cup heavy cream
Instructions
- Step 1: Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Step 3: Add the minced garlic and chicken pieces to the skillet. Cook until the chicken is browned and cooked through, about 6-8 minutes.
- Step 4: Stir in the diced tomatoes with green chilies and chipotle sauce. Allow to simmer for about 5 minutes to let the flavors meld together.
- Step 5: Lower the heat and stir in the heavy cream, mixing well. Allow it to heat through for another couple of minutes before adding the cooked pasta.
- Step 6: Toss the cooked pasta in the skillet until well coated with the sauce. Serve hot, garnished with fresh herbs if desired.
Notes
- For optimal storage, keep any leftover Spicy Chicken Chipotle Pasta in an airtight container in the refrigerator for up to 3 days.
- When reheating, gently warm the pasta on the stovetop with a splash of milk or chicken broth to restore creaminess and prevent it from drying out.
- Consider serving the pasta with a sprinkle of fresh cilantro or parsley and a squeeze of lime juice to brighten the flavors and add a refreshing touch.
- For a little extra kick, try marinating the chicken pieces in chipotle sauce before cooking; this enhances the smoky flavor throughout the dish.
