  • 2 cups shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C) and cook the lasagna noodles according to package instructions. Drain and set aside.
  2. Step 2: In a large skillet, sauté the sliced mushrooms over medium heat for about 5 minutes until they are tender. Add the chopped spinach and cook for an additional 2 minutes until wilted. Remove from heat.
  3. Step 3: In a mixing bowl, combine the ricotta cheese, Italian seasoning, and half of the mozzarella cheese. Stir in the cooked spinach and mushroom mixture until well combined.
  4. Step 4: Spread a thin layer of marinara sauce on the bottom of a baking dish. Layer three lasagna noodles over the sauce, followed by half of the ricotta mixture, another layer of marinara sauce, and a sprinkle of Parmesan cheese.
  5. Step 5: Repeat the layers with three more noodles, the remaining ricotta mixture, more marinara sauce, and half of the remaining mozzarella cheese. Finish with the last three noodles on top, cover with the remaining marinara sauce and sprinkle with the rest of the mozzarella and Parmesan cheeses.
  6. Step 6: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until bubbly and golden brown. Let it cool for a few minutes before serving.
