Ingredients
Scale
- 8 slices of thick bread (such as brioche or challah)
- 8 oz cream cheese, softened
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup powdered sugar
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla bean paste
- Butter for cooking
Instructions
- Step 1: In a medium bowl, combine the softened cream cheese and powdered sugar. Mix until smooth and creamy, then gently fold in the sliced strawberries to create the cheesecake filling.
- Step 2: Take four slices of bread and spread a generous amount of the strawberry cheesecake filling on each slice. Top with the remaining four slices of bread to create sandwiches.
- Step 3: In a shallow bowl, whisk together the eggs, milk, and vanilla powder until well combined. This will be your egg mixture for dipping the sandwiches.
- Step 4: Heat a skillet or griddle over medium heat and add a small amount of butter to coat the surface.
- Step 5: Dip each stuffed sandwich into the egg mixture, ensuring both sides are coated. Cook in the skillet for about 3-4 minutes per side, or until golden brown. Serve warm, optionally topped with additional strawberries and powdered sugar.
Notes
- For optimal freshness, store any leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, simply place the stuffed French toast in a skillet over low heat for a few minutes on each side, or warm it in the microwave for about 30 seconds until heated through.
- For an extra special touch, serve your French toast with a drizzle of maple syrup and a dollop of whipped cream alongside additional fresh strawberries.
- When making the cheesecake filling, ensure the cream cheese is fully softened to achieve a smooth blend; this will make spreading much easier and enhance the overall creaminess of your French toast.
