Indulge in a refreshing Summer Berry Jello Lasagna, where luscious mixed berries and creamy layers unite. This delightful treat is perfect for warm days.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 cups of mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 package (3 oz) of cherry Jell-O
  • 1 cup of boiling water
  • 1 cup of cold water
  • 8 oz of cream cheese, softened
  • 1 cup of powdered sugar
  • 2 cups of whipped topping (like Cool Whip)
  • 1 package (9 oz) of graham crackers

Instructions

  1. Step 1: Begin by preparing the Jell-O. In a mixing bowl, dissolve the cherry Jell-O in 1 cup of boiling water, stirring until fully dissolved. Then add 1 cup of cold water and mix well. Set aside to cool slightly.
  2. Step 2: In another bowl, combine the softened cream cheese and powdered sugar. Beat with an electric mixer until smooth and creamy. Gently fold in the whipped topping until fully incorporated.
  3. Step 3: To assemble the lasagna, start with a layer of graham crackers at the bottom of a rectangular dish. Break them as needed to cover the base completely.
  4. Step 4: Spread half of the cream cheese mixture over the graham crackers, followed by half of the mixed berries. Pour half of the prepared Jell-O over this layer, making sure it spreads evenly.
  5. Step 5: Repeat the layers by adding another layer of graham crackers, then the remaining cream cheese mixture, remaining berries, and finally pour over the rest of the Jell-O. Refrigerate for at least 4 hours or until set.
  6. Step 6: Once set, slice into squares and serve chilled for a refreshing summer dessert! Enjoy your Summer Berry Jello Lasagna!

Notes

  • For optimal storage, keep your Summer Berry Jello Lasagna in an airtight container in the refrigerator, where it will last for up to 3 days.
  • This dessert is best served chilled directly from the fridge; no reheating is necessary, as the coolness enhances its refreshing flavors on a hot summer day.
  • Consider adding a dollop of extra whipped topping or a sprinkle of fresh mint leaves on top just before serving for an elegant touch that elevates the dessert's presentation.
  • When mixing the cream cheese and powdered sugar, ensure the cream cheese is fully softened to room temperature for a smoother texture that blends seamlessly with the whipped topping.
