Ingredients
Scale
- 1 box of white cake mix (15.25 oz)
- 3 large eggs
- 1 cup of water
- 1 cup of mixed berries (strawberries, blueberries, raspberries)
- 1 cup of sweetened condensed milk
- 1 cup of whipped topping
- 1/2 cup of powdered sugar
- Fresh mint leaves for garnish (optional)
Instructions
- Step 1: Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it lightly or lining it with parchment paper.
- Step 2: In a large mixing bowl, combine the white cake mix, eggs, and water. Mix until the ingredients are well combined and the batter is smooth.
- Step 3: Pour the batter into the prepared baking pan and bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan.
- Step 4: Once cooled, use a fork or skewer to poke holes all over the surface of the cake. This will allow the condensed milk to soak into the cake.
- Step 5: In a separate bowl, mix the sweetened condensed milk with half of the mixed berries (reserve some for topping). Pour this mixture evenly over the poked cake, allowing it to soak in for at least an hour in the refrigerator.
- Step 6: Before serving, top the cake with whipped topping, sprinkle with powdered sugar, and add remaining mixed berries. Garnish with fresh mint leaves if desired. Enjoy!
Notes
- For optimal freshness, store any leftover Summer Berry Poke Cake in an airtight container in the refrigerator for up to 3 days. If you prefer a slightly warm treat, microwave individual slices for about 10-15 seconds to bring back some moisture without compromising the flavor. Serve with a scoop of vanilla ice cream alongside the cake for a delightful contrast of flavors and textures. To enhance the berry flavor, consider macerating the reserved mixed berries with a sprinkle of sugar before topping your cake; this will create a delicious syrup that adds even more moisture and sweetness.
