Instructions
- Step 1: Preheat your oven to 325°F (160°C) and lightly grease a 9-inch springform pan.
- Step 2: In a mixing bowl, combine the crushed graham crackers and melted butter until well mixed. Press the mixture firmly into the bottom of the prepared springform pan to form a crust.
- Step 3: In another bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Gradually add in the pineapple juice and alcohol-free vanilla extract, continuing to mix until fully incorporated.
- Step 4: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Step 5: Pour the cheesecake mixture over the prepared crust in the springform pan. Spread it evenly with a spatula and then top with chopped tropical fruits.
