Indulge in a creamy delight with our White Chocolate Coconut Cheesecake (video). This luscious dessert features a buttery graham cracker crust and rich white chocolate, perfect for any celebration.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup white chocolate chips, melted
  • 1 cup shredded coconut, toasted
  • 3 large eggs
  • 1 teaspoon vanilla bean paste

Instructions

  1. Step 1: Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan with cooking spray to prevent sticking.
  2. Step 2: In a medium bowl, combine the crushed graham crackers and melted butter, mixing until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form an even crust.
  3. Step 3: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add in the melted white chocolate, toasted coconut, eggs one at a time, and vanilla bean paste, mixing until fully incorporated.
  4. Step 4: Pour the cheesecake filling over the crust in the springform pan, spreading it evenly.
  5. Step 5: Bake in the preheated oven for about 50-60 minutes or until the edges are set and the center has a slight jiggle. Turn off the oven and let the cheesecake cool inside for about an hour.
  6. Step 6: Once cooled, refrigerate for at least four hours or overnight before serving. Optionally, garnish with additional toasted coconut or white chocolate shavings before slicing.

Notes

  • For optimal storage, keep the cheesecake tightly covered in the refrigerator, where it will stay fresh for up to a week.
  • There's no need to reheat this cheesecake; enjoy it chilled for the best flavor and texture, but you can let it sit at room temperature for about 15 minutes before serving if you prefer a softer bite.
  • Serve your cheesecake with a dollop of whipped cream or a drizzle of chocolate sauce for an extra indulgent touch that complements the flavors beautifully.
  • For a creamier texture, ensure your cream cheese is fully softened before mixing, and consider using high-quality white chocolate for richer flavor.
