Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup white chocolate chips, melted
- 1 cup fresh raspberries
- 2 tablespoons raspberry preserves
Instructions
- Step 1: Preheat the oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs and melted butter until well blended. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Step 2: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar and continue mixing until fully incorporated.
- Step 3: Add the eggs one at a time to the cream cheese mixture, mixing well after each addition. Then stir in the melted white chocolate chips until combined.
- Step 4: Pour half of the cheesecake batter over the prepared crust in the springform pan. Dot with fresh raspberries and spoon half of the raspberry preserves on top. Gently swirl with a knife to create a marbled effect.
- Step 5: Pour the remaining cheesecake batter over the first layer and repeat with more raspberries and raspberry preserves. Swirl again for desired marbling. Bake in the preheated oven for about 55-60 minutes or until set but still slightly jiggly in the center.
- Step 6: Once baked, turn off the oven and leave the cheesecake inside for an hour to cool gradually. Remove from oven, allow to cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
- For optimal freshness, store your White Chocolate Raspberry Swirl Cheesecake covered in the refrigerator, where it will keep well for up to five days.
- If you prefer a warm dessert, gently reheat individual slices in the microwave for about 10-15 seconds, being careful not to overheat and alter the texture.
- Consider serving each slice with a dollop of whipped cream and a few fresh raspberries on top to enhance both presentation and flavor.
- For an extra rich cheesecake, make sure your cream cheese is at room temperature before mixing; this helps achieve that smooth, creamy consistency you want.
