Indulge in the creamy goodness of WHITE LASAGNA STUFFED PEPPERS – LOW CARB KETO THM S! Bursting with ricotta and mozzarella, these peppers offer a satisfying, guilt-free twist on a classic dish.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 large bell peppers (any color)
  • 1 pound ground turkey or chicken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with cooking spray or olive oil.
  2. Step 2: Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in the prepared baking dish.
  3. Step 3: In a large skillet over medium heat, cook the ground turkey or chicken until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  4. Step 4: In a mixing bowl, combine the cooked meat, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined.
  5. Step 5: Stuff each bell pepper generously with the meat and cheese mixture. Top each stuffed pepper with the remaining mozzarella cheese.
  6. Step 6: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

Notes

  • For optimal storage, keep any leftover stuffed peppers in an airtight container in the refrigerator for up to 3 days, or freeze them for up to a month.
  • To reheat, place the stuffed peppers in a microwave-safe dish and heat on medium power for 2-3 minutes, or until warmed through; you can also reheat them in the oven at 350°F (175°C) for about 15 minutes for a crispy topping.
  • Serve your white lasagna stuffed peppers with a simple mixed green salad and a drizzle of balsamic glaze for a refreshing contrast to the rich flavors.
  • For an extra flavor boost, consider adding some chopped spinach or sautéed mushrooms to the cheese mixture before stuffing the peppers, enhancing both texture and taste!
