- 4 large bell peppers (any color)
- 1 pound ground turkey or chicken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Step 1: Preheat your oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with cooking spray or olive oil.
- Step 2: Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in the prepared baking dish.
- Step 3: In a large skillet over medium heat, cook the ground turkey or chicken until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Step 4: In a mixing bowl, combine the cooked meat, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined.
- Step 5: Stuff each bell pepper generously with the meat and cheese mixture. Top each stuffed pepper with the remaining mozzarella cheese.
- Step 6: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
Notes
- For optimal storage, keep any leftover stuffed peppers in an airtight container in the refrigerator for up to 3 days, or freeze them for up to a month.
- To reheat, place the stuffed peppers in a microwave-safe dish and heat on medium power for 2-3 minutes, or until warmed through; you can also reheat them in the oven at 350°F (175°C) for about 15 minutes for a crispy topping.
